Yeast activity roughly doubles for every 8-10 degree rise, so fermentation time divides by Q10 raised to the temperature difference over ten. A dough at 28 C ferments about 1.4 times faster than at 24 C, which is why dough temperature control matters more than clock time in a bakery.

Not in flavour. Warm fast fermentation favours yeast activity over bacterial acid production, giving less flavour complexity. Cold retarding trades time for flavour development.
Around 32-35 C for gas production, but flavour and dough handling suffer above about 28 C and above 40 C yeast begins to die. Practical bakery doughs run 24-27 C.
