Sampling must exceed twice the signal bandwidth, and oversampling beyond that buys anti-alias filter margin plus noise reduction of 3 dB per doubling. A multiplexed ADC must then run at the per-channel rate times the channel count, which is what sets the required conversion time.

fs per channel = 2 x bandwidth x oversampling; ADC rate = fs x channels
It relaxes the analogue anti-alias filter, allows digital decimation filtering, and spreads quantisation noise over a wider band so filtering recovers resolution.
Settling time. The input must settle after each channel switch, so the usable conversion rate is lower than the ADC's headline figure.
