Kombucha is brewed at 50-70 grams of sugar and 4-6 grams of tea per litre, with 10-20% mature starter liquid added to acidify the batch immediately. The starter is the key safety control: it drops pH below 4.2 fast enough to exclude spoilage organisms and moulds.
