For a buffered system the Henderson-Hasselbalch equation gives pH = pKa + log([A-]/[HA]). Without conjugate base, a weak acid alone gives pH = (pKa - log C)/2. The 4.6 boundary is the food safety dividing line: above it, Clostridium botulinum can grow and thermal sterilisation or refrigeration is required.
