A 750 ml bottle holds 25.4 ounces, which is five pours at a proper five-ounce serving or six at a toast-sized four — so thirty guests need six bottles chilled and open for midnight alone, quite separately from what is drunk across the evening. Calculating that figure on its own is the point, because running out at 11:58 is unrecoverable. Allow 40 minutes of chilling per bottle in an ice-and-water bath, or three hours in a refrigerator, and open the toast bottles just before rather than early.
