Ingredient quantities scale linearly with batch size, so the scale factor is target divided by pilot batch size. A process loss allowance covers material retained in vessels, pipes and filters, which is proportionally much larger at pilot scale but never zero at production scale.

Scaled quantity = pilot quantity x (target batch / pilot batch) x (1 + loss allowance)
Mixing, heat transfer and shear do not scale linearly with volume. Emulsion droplet size, hydration of gums and cooling rate all change, so a linear ingredient scale-up still needs process re-optimisation.
Where possible, tip speed rather than impeller rpm, specific energy input per kilogram, and heating and cooling rates. Geometric similarity of the vessel helps considerably.
