Degrees Brix is grams of sucrose per 100 grams of solution. The standard conversion to specific gravity is SG = 1 + Bx / (258.6 - (Bx/258.2) x 227.1). Degrees Plato, used in brewing, is numerically almost identical to Brix. Refractometer readings must be temperature corrected unless the instrument compensates automatically.

Only in a pure sucrose solution. In juice and wort, acids, salts and dissolved proteins also refract light, so Brix reads total soluble solids rather than sugar alone.
Ethanol has a lower refractive index than water, so a fermenting sample reads artificially low. Hydrometer or specialised correction formulae must be used once alcohol is present.
